RECIPE FOR JOHNNY MARZETTI

JOHNNY MARZETTI
Makes 100 servings.Bake in 350° oven.
(2 pans,12” x 23” x 2”)
INGREDIENTSWEIGHTSMEASURES
Noodles5 lbs.
Water2 ½ qts. or 10 cups
Salt2 ½ Tbsp.
Ground beef15 lbs.
Celery,chopped1 qt. or 4 cups
Onions,chopped1 ¾ lbs.1 qt. or 4 cups
Tomato puree2 ½ qts (or 10 cups)
Pepper1 ½ Tbsp.
Cheese,grated2 lbs.2 qts. or 8 cups
DIRECTIONS:
1.      Boil noodles in salted water until tender.  Drain and spread evenly in four greased baking pans.
2.      Brown meat in a small amount of fat.  Add seasonings,celery,onions,and puree.  Simmer on top of stove about 10 minutes.
3.      Spread over noodles in 2 baking pans,12” x 20” x 2”.  Top with cheese and bake in 350° oven for 30 minutes.
