RECIPE FOR CHEESE APPLE CRISP

CHEESE APPLE CRISP
Makes 100 servings fruit.Bake in 350° oven.

INGREDIENTSWEIGHTSMEASURES
Apples,sliced,fresh **18 lbs.12 qts.
Cinnamon2 Tbsps.
Water1 ½ qts. (or 6 cups)
Lemon juice6 Tbsps.
Sugar6 lbs.3 qts (or 12 cups)
Sifted flour2 lbs.2 qts. (or 8 cups)
Salt1 Tbsp.
Butter2 lbs.1 qt. (or 4 cups)
Cheese,shredded3 lbs.3 qts.
**Canned sliced apples may be substituted for fresh apples,
DIRECTIONS:
1.      Arrange the sliced apples in shallow greased baking pans.
2.      Sprinkle with the cinnamon,add water and lemon juice.
3.      Combine sugar,flour and salt;work in the butter to form a crumbly mixture.
4.      Stir in shredded cheese and spread the mixture of the apples.
5.      Bake in 350° F. oven until apples are tender and the crust is brown and crisp  (approximately 30 to 40 minutes).
