HOW TO COOK PASTRY FOR PIE

PASTRY FOR PIE
Makes 100 servings,2 –18” x 26” pans.Bake in 400° oven.
INGREDIENTSMEASURES
All-purpose flour,sifted2 qts. (or 8 cups)
Rolled wheat1 qt. (or 4 cups)
Salt1 ½ Tbsps.
Shortening3 ½ cups
Cold water2 cups
DIRECTIONS:
1.      Blend together first 3 ingredients.
2.      Cut or rub in shortening until mixture is granular;add water and mix.  Roll out on a lightly floured board.
3.      Place pastry in 18” x 26” pans.  Bake at 400° F. in regular oven 12 minutes or until brown,or bake at 350° F in a convection oven.
